  • 3-4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 2 teaspoons Italian seasoning
  • to taste salt and pepper
  • Fresh parsley, for garnish

Preparation

  • In a large pot, heat olive oil over medium-high heat.
  • Season the chuck roast with salt and pepper, then sear it on all sides until browned. Remove from pot and set aside.
  • In the same pot, add the chopped onion and garlic, sautéing until softened.

Cooking

  • Stir in the beef broth, diced tomatoes, tomato paste, and Italian seasoning.
  • Return the roast to the pot, covering it with the sauce.
  • Bring to a simmer, then cover and reduce heat to low.
  • Cook for about 3-4 hours until the meat is tender and shreds easily.
  • Serve garnished with fresh parsley.

Notes

Tips: You can swap beef chuck roast for brisket or round roast. Adjust Italian seasoning to your taste; fresh herbs like rosemary or thyme work well too. For a richer flavor, add a splash of red wine to the broth. Leftover pot roast makes delicious sandwiches or tacos.
