Ingredients
  

For the Skillet Meal

  • 1 tbsp olive oil
  • 1 onion diced
  • 2 garlic cloves minced
  • 6 cups fresh spinach
  • 3/4 cup heavy cream or half and half
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning

Instructions
 

  • Sauté onion in olive oil until softened.
  • Add garlic and cook until fragrant.
  • Add spinach and allow to wilt.
  • Stir in cream and cheeses and simmer gently.

Notes

Add a splash of milk or cream when reheating to keep the sauce smooth. Best enjoyed within 2 to 3 days.
