Ingredients
  

For the Chicken

  • 1 1/2 lb boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Rice

  • 1 cup white or brown rice
  • 2 cups water or chicken broth

For the Vegetables

  • 1 cup cherry tomatoes halved
  • 1 zucchini sliced
  • 1 red bell pepper sliced
  • 2 cups spinach or arugula

Instructions
 

  • Cook rice according to package instructions and set aside.
  • Season and cook chicken until fully cooked, then slice.
  • Sauté vegetables until tender and wilt greens.
  • Assemble bowls with rice, chicken, vegetables, and finish with Italian drizzle.

Notes

Add Parmesan and fresh herbs just before serving for best flavor. Store leftovers in the refrigerator for up to 4 days.
