  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 clove garlic minced
  • 1 tsp Italian seasoning

Soup

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 carrots diced
  • 2 stalks celery diced
  • 8 cups chicken broth
  • 1 cup acini di pepe pasta
  • 3 cups fresh spinach
  • Salt and pepper to taste

Instructions
 

Preparation

  • Mix ground turkey, breadcrumbs, Parmesan, egg, garlic, and Italian seasoning in a bowl. Form into small meatballs.
  • Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until softened. Add chicken broth and bring to a simmer.
  • Gently add meatballs to the simmering broth. Cook until the meatballs are fully cooked, about 20 minutes.
  • Add pasta to the soup and cook until al dente. Stir in fresh spinach and let it wilt.
  • Taste and adjust seasoning with salt and pepper as needed.

Serving

  • Ladle soup into bowls. Garnish with additional Parmesan cheese, if desired.
