Ingredients
  

Dressing Base

  • 1/2 cup olive oil Extra virgin is recommended for best flavor.
  • 1/4 cup red wine vinegar For a sweeter flavor, use balsamic vinegar.
  • 1 teaspoon Dijon mustard Can omit if preferred.
  • 1 teaspoon garlic powder Fresh minced garlic can also be used.
  • 1 teaspoon dried oregano Fresh oregano can be substituted.
  • 1 teaspoon dried basil Fresh basil is a wonderful alternative.
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • In a medium mixing bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, oregano, and basil.
  • Season with salt and pepper to taste.
  • Use immediately or store in an airtight container in the refrigerator for up to a week.

Notes

For a creamier texture, add a tablespoon of mayonnaise or Greek yogurt. Fresh herbs can be substituted for dried, just double the amount used. Store in the fridge and give a good shake before use.
