Ingredients
  

Skillet

  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breast cut into bite size pieces
  • 1 yellow onion finely chopped
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.25 tsp crushed red pepper flakes optional
  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp tomato paste
  • 0.5 cup chicken broth low sodium
  • 5 cups fresh spinach packed

Instructions
 

  • Pat the chicken pieces dry and lightly season with a pinch of salt and black pepper. This helps the chicken brown properly.
  • Heat olive oil in a large skillet over medium heat. Add the chicken in an even layer and cook for 3 to 4 minutes before stirring.
  • Continue cooking the chicken until fully cooked through, then transfer it to a plate and set aside.
  • Add the chopped onion to the same skillet and cook for 3 to 4 minutes until softened.
  • Stir in the garlic and cook for about 30 seconds until fragrant.
  • Add Italian seasoning and crushed red pepper flakes, stirring briefly to bloom the herbs.
  • Stir in the tomato paste and cook for 1 minute, scraping the skillet until it deepens in color.
  • Pour in the chicken broth and scrape the bottom of the skillet to release any browned bits.
  • Return the cooked chicken to the skillet and simmer for 3 to 5 minutes until the sauce lightly thickens.
  • Add the spinach in batches, stirring until fully wilted and evenly combined.
  • Taste and adjust seasoning if needed. Remove from heat and serve warm.

Notes

Serve on its own for a lighter meal or with pasta, rice, or crusty bread. If using frozen spinach, thaw and squeeze dry before adding.
