Chicken Marinade

  • 1/4 cup honey
  • 2 tbsp apple cider vinegar
  • 1 tsp red pepper flakes
  • 2 cloves garlic minced
  • 1 lb boneless chicken breasts

Hot Honey Sauce

  • 1/4 cup honey
  • 1/2 tsp red pepper flakes
  • 2 tbsp water

Bowl Assembly

  • 2 cups cooked brown rice or quinoa
  • 1 cup bell peppers sliced
  • 1 cup broccoli florets
  • 1/2 cup carrots sliced

Instructions
 

Preparation

  • Combine honey, apple cider vinegar, red pepper flakes, and garlic in a bowl. Add chicken and coat thoroughly. Marinate in the refrigerator for at least 30 minutes.
  • In a saucepan, combine honey, red pepper flakes, and water. Heat over medium until the mixture simmers and thickens slightly. Set aside.
  • Preheat your grill or oven to 375°F. Remove chicken from marinade and cook until internal temperature reaches 165°F. Rest before slicing.
  • Grill or sauté bell peppers, broccoli, and carrots until tender. Season with salt and pepper to taste.
  • Layer cooked rice or quinoa in a bowl, add vegetables, and top with sliced chicken. Drizzle with hot honey sauce.
  • Serve immediately with your choice of sides. Enjoy the balance of sweet and spicy flavors.
