Ingredients
  

Chicken Salad

  • 2 cups cooked chicken breast shredded
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped sun-dried tomatoes
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Wrap Assembly

  • 8 large whole-wheat tortillas
  • 2 cups mixed baby greens

Instructions
 

Preparation

  • Cook the chicken breast by grilling, baking, or poaching it until fully cooked. Once cooled, shred the chicken using two forks or your hands.
  • In a large mixing bowl, combine Greek yogurt, mayonnaise, Dijon mustard, and balsamic vinegar. Season with salt and pepper, then mix until well combined.
  • Add the shredded chicken, diced celery, diced red onion, chopped fresh basil, and sun-dried tomatoes to the dressing. Stir until all ingredients are evenly coated.

Assembly

  • Lay out the whole-wheat tortillas on a clean surface. Place a handful of mixed baby greens in the center of each.
  • Spoon a generous amount of the chicken salad mixture over the greens. Be sure to distribute evenly across all tortillas.
  • Carefully roll each tortilla into a wrap, tucking in the sides as you go to ensure the filling stays secure. Once rolled, slice each wrap in half diagonally.

Serving

  • Arrange the wraps on a serving platter. Serve immediately, or refrigerate for later.
