Ingredients
  

Dough

  • 2 1/4 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 tsp sugar
  • 3/4 cup warm water
  • 1 tbsp olive oil
  • 1 tsp salt

Toppings

  • 1 red bell pepper sliced
  • 1 zucchini sliced
  • 1/2 red onion sliced
  • 1 cup cherry tomatoes halved
  • 1 cup mozzarella cheese shredded
  • 1/4 cup fresh basil leaves
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a mixing bowl, combine warm water and sugar, then sprinkle in yeast. Let it sit for 5 minutes until foamy. Add flour, olive oil, and salt. Knead until smooth, cover, and let rise until doubled.
  • Preheat your grill to medium-high heat. If using a pizza stone, place it on the grill to heat up as well.

Grilling Vegetables

  • Toss sliced vegetables in olive oil, salt, and pepper. Grill for 4-5 minutes on each side until tender and grill marks appear.

Assembling the Pizza

  • Roll out the dough on a floured surface to your desired thickness. Lightly brush one side with olive oil.
  • Place the dough, oil-side down, on the grill. Cook for 2-3 minutes until grill marks form, then flip.
  • Quickly add grilled vegetables and mozzarella cheese. Close the grill lid and cook for another 3-5 minutes until the cheese melts.
  • Remove the pizza from the grill. Let it rest for a few minutes, then top with fresh basil leaves before slicing.

Storage

  • Wrap leftover pizza slices in aluminum foil and store in the refrigerator for up to 3 days. Reheat on the grill or in an oven.
