Equipment

  • 1 grill preheated to medium-high
  • 1 pizza stone optional
  • 1 Mixing Bowl large

Ingredients

Marinade

  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Pizza Toppings

  • 1 pound boneless skinless chicken breasts
  • 1 large red bell pepper sliced
  • 1 large green bell pepper sliced
  • 1 medium onion thinly sliced
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro leaves for garnish

Pizza Crust

  • 1 pre-made pizza dough or homemade dough

Instructions

Preparation

  • Combine olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper in a bowl. Coat the chicken breasts and marinate in the refrigerator for at least 1 hour.
  • Preheat your grill to medium-high heat. Grill the chicken for 6-7 minutes on each side until fully cooked. Let the chicken rest before slicing into strips.
  • Slice the red and green bell peppers and the onion. Set aside until ready to assemble the pizza.
  • If using a pizza stone, place it on the grill to preheat while you prepare the pizza toppings.
  • Roll out the pizza dough and spread marinara sauce evenly over the surface. Sprinkle mozzarella and cheddar cheese, then add sliced chicken, peppers, and onions.

Serving

  • Place the assembled pizza on the grill or pizza stone. Cook covered for 10-12 minutes until the crust is golden and the cheese is melted.
  • Remove the pizza from the grill, let it cool slightly, garnish with cilantro, slice, and serve immediately.

Storage

  • Store any leftover pizza in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven or microwave before serving.
