Equipment

  • 1 grill preheated to medium-high
  • 1 meat thermometer for checking doneness
  • 1 serving platter

Ingredients

Main Ingredients

  • 4 boneless skinless chicken breasts
  • 8 oz fresh mozzarella sliced
  • 2 large tomatoes sliced
  • 1/2 cup fresh basil leaves

Marinade

  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper

For Serving

  • 2 tbsp olive oil
  • 2 tbsp balsamic glaze

Instructions

Preparation

  • Combine olive oil, minced garlic, salt, and black pepper in a bowl. Add the chicken breasts and coat them thoroughly with the marinade. Allow to marinate for at least 30 minutes in the refrigerator.
  • Slice the mozzarella and tomatoes into even rounds. Wash and dry the fresh basil leaves. Set these aside for later assembly.

Cooking

  • Preheat the grill to medium-high heat. Place the marinated chicken breasts on the grill and cook for about 6-7 minutes per side, ensuring they reach an internal temperature of 165°F.
  • Remove the chicken from the grill and let it rest on a plate for 5 minutes. This resting period allows the juices to redistribute, keeping the chicken moist.

Assembly

  • Arrange the grilled chicken on a serving platter. Layer slices of mozzarella and tomatoes on top of each chicken breast, alternating between the two. Garnish with basil leaves.
  • Finish with a drizzle of olive oil and balsamic glaze over each assembled piece. Serve immediately while the cheese is slightly melted.

Serving and Storage

  • Enjoy the grilled chicken caprese with a side of crusty bread or a light salad for a complete meal.
  • Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently to avoid drying out the chicken.

Notes

Pro Tips: Let the chicken rest after grilling to lock in juices. Ingredient Substitutions: Try using burrata instead of mozzarella for a creamier texture. How to Serve: Serve immediately with crusty bread. Storage & Freshness: Keep leftovers in the fridge for up to 2 days. Make-Ahead Tips: Marinate the chicken overnight for deeper flavor.
