  • 4 medium zucchinis
  • 2 cups cooked chicken shredded
  • 1 cup buffalo sauce
  • 1/2 cup cream cheese softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Preparation

  • Wash and halve the zucchinis lengthwise. Scoop out the seeds to form boats. Brush with olive oil and season with salt and pepper.
  • Cook chicken breasts until no longer pink. Shred them using two forks.
  • In a bowl, combine shredded chicken, buffalo sauce, cream cheese, and half of the mozzarella and cheddar cheeses.

Grilling

  • Heat your grill to medium heat.
  • Place the zucchini boats on the grill, filling side up. Grill for about 20 minutes until zucchinis are tender and cheese is melted.

Serving

  • Remove from grill. Garnish with optional toppings like jalapeños, bacon, and parsley. Serve warm.
