Ingredients
  

Chicken Marinade

Tzatziki Sauce

  • Salt and pepper to taste

Rice

  • 1 cup basmati rice
  • 1 3/4 cups water
  • 1 tsp lemon zest
  • Pinch of salt

Bowl Assembly

  • 1 cup cherry tomatoes halved
  • 1/2 cucumber sliced
  • 1/4 red onion thinly sliced
  • 4 pita breads warmed

Instructions
 

Marinate the Chicken

  • In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, and thyme. Whisk together until well combined.
  • Add the chicken to the marinade, ensuring each piece is evenly coated. Cover and let it marinate in the refrigerator for at least 30 minutes, or overnight for best results.

Cook the Chicken and Rice

  • Preheat a grill pan over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest before slicing.
  • In a rice cooker, combine basmati rice, water, lemon zest, and salt. Cook according to the rice cooker instructions until rice is tender and fluffy.

Make the Tzatziki Sauce
