Ingredients
  

Chicken Marinade

Gyro Sauce

  • 1 cup Greek yogurt
  • 1/2 cucumber grated
  • 2 cloves garlic minced
  • 1 tbsp lemon juice

Bowl Assembly

  • 2 cups cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 4 pita breads
  • 1/4 cup feta cheese crumbled (optional)
  • 1/4 cup kalamata olives sliced (optional)

Instructions
 

Preparation

  • In a large bowl, combine olive oil, minced garlic, lemon juice, and oregano. Add chicken breasts and coat well. Cover and refrigerate for at least 30 minutes, or overnight for best results.

Cooking the Chicken

  • Preheat your grill pan or outdoor grill to medium-high heat. Cook the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let rest for 5 minutes before slicing.

Making the Gyro Sauce

  • In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, and lemon juice. Stir until well mixed and smooth. Chill in the refrigerator until ready to use.

Assembling the Bowl

  • Begin by placing a warm pita bread at the base of each bowl. Layer with sliced grilled chicken, cherry tomatoes, and red onion. Drizzle with homemade gyro sauce and top with optional feta cheese and olives.
