  • 1 pound pizza dough
  • 2 cups cherry tomatoes halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces fresh mozzarella sliced
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Preparation

  • If making dough from scratch, combine flour, yeast, salt, and water. Knead until smooth and elastic. Let rise until doubled in size. For store-bought dough, let it come to room temperature.
  • Preheat oven to 400°F. Toss halved cherry tomatoes with olive oil, oregano, salt, and pepper. Spread on a baking sheet and roast for 20 minutes until soft and caramelized.
  • Increase oven temperature to 475°F in preparation for baking the pizza.
  • On a floured surface, roll out the dough to desired thickness. Transfer to a pizza stone or baking sheet lined with parchment paper.
  • Spread roasted tomatoes over the dough. Top with slices of fresh mozzarella and sprinkle with Parmesan cheese.
  • Bake in the preheated oven for 10-15 minutes, until the crust is golden brown and the cheese is melted and bubbly.
  • Remove pizza from oven. Let cool slightly before garnishing with fresh basil leaves. Slice and serve.
  • Serve hot, with a side salad or your favorite Italian dish.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
