Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 Mixing Bowl large
  • 1 Rolling Pin

Ingredients

Flatbread Dough

  • 2 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 teaspoon salt
  • 3/4 cup warm water
  • 2 tablespoons olive oil

Toppings

  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon fresh oregano chopped
  • 1 tablespoon fresh basil chopped

Instructions

Preparation

  • In a mixing bowl, combine flour, yeast, and salt. Gradually add warm water and olive oil, stirring until the dough forms. Knead on a floured surface for 5 minutes until smooth. Place in a lightly oiled bowl, cover, and let rise for 1 hour.
  • Preheat your oven to 425°F. Prepare a baking sheet with parchment paper.
  • After the dough has risen, punch it down and roll it out onto the prepared baking sheet. Spread a thin layer of olive oil over the surface.
  • Arrange the cherry tomatoes, olives, and feta cheese evenly over the dough. Sprinkle with fresh oregano and basil.

Serving

  • Bake in the preheated oven for 20-25 minutes, or until the edges are golden and crispy. Allow to cool slightly before slicing.
  • Slice the flatbread into 8 pieces and serve warm. Enjoy as a main dish or alongside a salad.

Storage

  • Store any leftover flatbread in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for the best texture.

Notes

Pro Tips: For a crispier crust, pre-bake the dough for 5 minutes before adding toppings. Use fresh herbs for the best flavor.
Ingredient Substitutions: Swap feta with goat cheese for a creamier texture. Use sun-dried tomatoes if fresh are unavailable.
How to Serve: Serve with a side of hummus or a fresh Greek salad.
Storage & Freshness: Best consumed fresh but can be stored in the fridge for up to 3 days.
Make-Ahead Tips: Prepare the dough ahead and freeze it for up to 2 months for easy future use.
