Equipment

  • 1 pizza stone for crispier crust
  • 1 Mixing Bowl large
  • 1 Rolling Pin

Ingredients

Dough

  • 2 1/4 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 tsp sugar
  • 3/4 cup warm water
  • 1 tbsp olive oil
  • 1/2 tsp salt

Lemon Ricotta Topping

  • 1 cup ricotta cheese
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 1/2 tsp black pepper
  • 1 cup mozzarella cheese shredded

Instructions

Preparation

  • Combine yeast, sugar, and warm water in a large mixing bowl. Let it sit until frothy, about 5 minutes. Add flour, salt, and olive oil. Mix until a dough forms.
  • Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour.
  • In a bowl, mix ricotta, lemon zest, lemon juice, minced garlic, and black pepper until well combined. Set aside.
  • Preheat your oven to 475°F and place a pizza stone inside to heat.
  • Punch down the dough and roll it out on a floured surface to your preferred thickness. Transfer to a pizza stone or baking sheet.
  • Spread the lemon ricotta mixture evenly over the dough, leaving a small border for the crust. Sprinkle mozzarella cheese on top.
  • Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.

Serving

  • Remove from the oven and let it cool slightly before slicing. Serve warm.

Storage

  • Store any leftover slices in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
