Equipment

  • 1 grill for grilling zucchini
  • 1 pizza stone optional for baking
  • 1 Mixing Bowl large
  • 1 Rolling Pin

Ingredients

Pizza Ingredients

  • 1 pizza dough homemade or store-bought
  • 2 medium zucchini sliced thin
  • 1 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh basil or oregano for garnish

Instructions

Preparation

  • Roll out the pizza dough on a floured surface to your desired thickness. Preheat your grill or oven to the appropriate temperature.
  • Slice the zucchini into thin rounds. Toss with olive oil, minced garlic, salt, and pepper.
  • On a preheated grill, cook the zucchini slices for 3-4 minutes on each side until tender and grill marks appear.
  • Spread a thin layer of olive oil on the rolled-out dough. Arrange grilled zucchini evenly over the base and sprinkle with crumbled feta cheese.
  • If using a grill, place the assembled pizza on the grill and cover. Cook for about 10-15 minutes until the crust is golden and the cheese is melted. Alternatively, bake in a preheated oven at 475°F for 10-12 minutes.
  • Once cooked, remove the pizza from the heat and sprinkle fresh basil or oregano leaves on top before serving.

Serving

  • Slice the pizza into 8 pieces. Serve warm with a side salad or your choice of accompaniments.

Storage

  • Place any leftover pizza in an airtight container and refrigerate for up to 2 days. Reheat in a skillet or oven to retain crispness.
