Ingredients
  

Flatbread Base

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 cup olive oil
  • 3/4 cup warm water
  • pinch of salt

Toppings

  • 1 lb fresh mushrooms sliced
  • 4 cloves garlic minced
  • 2 cups shredded mozzarella cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley and thyme for garnish

Instructions
 

Preparation

  • In a large mixing bowl, combine flour, baking powder, and salt. Add olive oil and warm water, mixing until a dough forms. Knead on a floured surface until smooth, about 5-7 minutes. Rest for 10 minutes.
  • Roll the dough into a thin layer, approximately 1/4 inch thick. Transfer to a parchment-lined baking sheet.
  • In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1-2 minutes. Add mushrooms and cook until golden brown, about 8-10 minutes. Season with salt and pepper.
  • Spread the cooked mushrooms evenly over the rolled-out dough. Sprinkle mozzarella cheese on top.
  • Preheat oven to 400°F. Bake for 15-20 minutes, or until cheese is bubbly and golden brown.

Serving

  • Remove from oven and let cool slightly. Garnish with fresh parsley and thyme before slicing and serving.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven until warm.
