Equipment

  • 1 pizza stone or baking sheet
  • 1 Large skillet
  • 1 Rolling Pin

Ingredients

Toppings

  • 2 tablespoons olive oil
  • 2 large onions thinly sliced
  • 1 pound mushrooms sliced
  • 1 cup mozzarella cheese shredded
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish

Pizza Dough

  • 1 ball of homemade pizza dough or store-bought

Instructions

Preparation

  • Heat olive oil in a large skillet over medium heat. Add sliced onions and a pinch of salt. Stir occasionally until onions soften, about 10 minutes. Reduce heat to low and cook for 20-30 minutes, stirring frequently, until golden brown.
  • Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer to a pizza stone or baking sheet.
  • Preheat your oven to 475°F (245°C) while you prepare the toppings.
  • Clean and slice the mushrooms. Set aside for topping the pizza.

Serving

  • Spread caramelized onions over the rolled-out dough. Evenly distribute the sliced mushrooms on top, followed by mozzarella cheese. Season with salt, pepper, and fresh thyme leaves.
  • Place the assembled pizza in the preheated oven. Bake for 12-15 minutes or until the crust is golden and the cheese is bubbly and lightly browned.
  • Remove the pizza from the oven and let cool for a few minutes. Slice into 8 pieces and serve warm, garnished with additional thyme if desired.

Storage

  • Wrap leftover pizza slices in plastic wrap or foil and store in the refrigerator for up to 3 days. Reheat in the oven for best texture.

Ingredient Substitutions: Try goat cheese for a tangy flavor or use gluten-free dough if needed.
How to Serve: Pair with a fresh salad or hearty soup for a complete meal.
Storage & Freshness: Store wrapped in the fridge for up to 3 days. Reheat in the oven to retain crispness.
Make-Ahead Tips: Prepare the dough and caramelize onions ahead of time. Assemble and bake when ready to serve.
