Ingredients

Manicotti and Sauce

  • 1 package 14 ounces manicotti shells
  • 2 cups marinara sauce

  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

Preparation

  • Bring a large pot of salted water to a boil. Cook the manicotti shells until al dente according to package instructions. Drain and cool under cold water. Set aside.
  • In a large mixing bowl, combine ricotta, 1 cup of mozzarella, 1/2 cup of Parmesan, eggs, basil, parsley, salt, and pepper. Mix until smooth. Add any optional ingredients like spinach if desired.
  • Using a small spoon or piping bag, fill each manicotti shell with the cheese mixture. Take care to fill them evenly without breaking the shells.
  • Preheat the oven to 375°F. Spread 1 cup of marinara sauce on the bottom of a 9x13-inch baking dish. Arrange the filled shells in a single layer over the sauce. Pour the remaining sauce over the top and sprinkle with remaining cheeses.

  • Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden and bubbly.

Serving

  • Allow the manicotti to rest for 5 minutes before serving. Garnish with additional fresh basil or parsley if desired. Serve hot with your choice of sides.

Storage

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F until warmed through before serving.
