  • 12 oz spaghetti
  • 1 lb shrimp peeled and deveined
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 6 cloves garlic minced
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 1/2 cup reserved pasta water
  • Juice of 1 lemon

Preparation

  • Peel and devein the shrimp if not already done. Mince the garlic and chop the parsley. Set aside.

Cooking

  • Season the shrimp with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and opaque. Remove from the skillet and set aside.
  • Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  • In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Return the shrimp to the skillet, add the cooked spaghetti, and toss to combine. Add reserved pasta water as needed to create a sauce. Stir in chopped parsley and lemon juice. Adjust seasoning with salt and pepper. Serve immediately.

Serving

  • Serve the Garlic Shrimp Spaghetti hot, garnished with extra parsley and a wedge of lemon on the side for squeezing.
