  • 1 lb ground chicken Can substitute with ground turkey
  • 1 onion, diced Sauté until soft
  • 3 cloves garlic, minced Adds rich flavor
  • 1 cup breadcrumbs Use gluten-free for gluten-free option
  • 2 eggs Binds ingredients together
  • 2 tbsp soy sauce Enhances umami flavor
  • 1 tsp salt To taste
  • 1/2 tsp pepper To taste
  • 1 cup Parmesan cheese, grated Divided into two portions

  • 1 tsp paprika For added flavor
  • 1 tsp Italian seasoning Optional, for an extra flavor kick

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  • Sauté diced onions in a skillet over medium heat until soft (about 5 minutes).
  • In a large bowl, mix together ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until combined.
  • Shape the mixture into a loaf form in the greased baking dish.
  • Sprinkle remaining Parmesan cheese on top. Optionally add paprika or Italian seasoning for extra flavor.

Baking

  • Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  • Let rest for 10 minutes before slicing.

Notes

For extra moisture, consider adding finely chopped vegetables like bell peppers or zucchini. Leftover meatloaf is perfect for sandwiches.
