Pizza Dough

  • 1 batch homemade pizza dough

  • 1/4 cup olive oil
  • 8 oz fresh mozzarella cheese sliced
  • 2 ripe tomatoes sliced
  • 1 cup fresh basil leaves
  • Salt and pepper to taste

Preparation

  • Begin by preparing your homemade pizza dough according to your favorite recipe. Allow it to rise until doubled in size, which usually takes about an hour.
  • Once the dough has risen, divide it into equal portions. Use a rolling pin to roll each portion into a thin circle, approximately 12 inches in diameter.
  • Preheat your grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.
  • Brush one side of the rolled-out dough with olive oil. Place the dough, oiled side down, onto the grill. Close the lid and cook for 2-3 minutes until grill marks appear. Flip the dough and grill for an additional 2 minutes.

Adding Toppings

  • Remove the grilled dough from the grill. Brush the top with olive oil, then layer on slices of mozzarella, tomatoes, and fresh basil leaves. Season with salt and pepper.
  • Return the pizza to the grill, close the lid, and cook for another 5-7 minutes until the cheese is melted and bubbly.

Serving

  • Remove the pizza from the grill and let it cool for a few minutes. Slice into wedges and serve warm, garnished with additional fresh basil if desired.

Storage

  • If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat on the grill or in an oven preheated to 350°F until warmed through.
