Salad

  • 1 1/2 cups orzo pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh basil chopped
  • 1/4 cup fresh parsley chopped

Dressing

  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process.
  • In a small bowl, whisk together the olive oil, fresh lemon juice, lemon zest, and minced garlic. Season with salt and pepper to taste.
  • In a large mixing bowl, combine the cooked and cooled orzo, cherry tomatoes, cucumber, red onion, fresh basil, and parsley. Pour the dressing over the salad and toss to coat evenly.
  • Let the salad sit for at least 15 minutes before serving to allow the flavors to meld.
