  • 12 oz spaghetti
  • 1/4 cup fresh lemon juice about 2 lemons
  • Zest of 1 lemon
  • 1/3 cup extra virgin olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves finely chopped
  • Salt and pepper to taste
  • 3 cloves garlic minced

Optional Additions

  • A pinch of red pepper flakes
  • 1/4 cup toasted pine nuts
  • 1/4 cup sun-dried tomatoes

Instructions
 

Preparation

  • Chop the basil, zest and juice the lemons, and mince the garlic.
  • Boil a large pot of salted water. Cook spaghetti until al dente, reserving 1 cup of pasta water before draining.
  • In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant. Stir in lemon juice, zest, and reserved pasta water.
  • Add the drained spaghetti to the skillet. Toss to coat in the sauce. Remove from heat and stir in Parmesan and basil.
  • Season with salt and pepper to taste. Serve immediately with additional Parmesan and basil as garnish.

Serving

  • Garnish with extra basil and serve with a side salad for a complete meal.

  • Place any leftovers in an airtight container and refrigerate for up to 3 days. Reheat gently before serving.
