  • 12 oz rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced
  • 1/2 red onion thinly sliced
  • 1/2 cup kalamata olives pitted and sliced
  • 1 cup feta cheese crumbled

Dressing Ingredients

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Preparation

  • Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  • While the pasta cooks, dice the cucumber and bell pepper, halve the cherry tomatoes, slice the red onion, and pit and slice the olives.
  • In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper until well combined.
  • In a large mixing bowl, combine the cooled pasta, prepared vegetables, and olives. Pour the dressing over the top and toss to coat everything evenly.
  • Gently fold in the crumbled feta cheese, ensuring it is evenly distributed throughout the salad.

Serving

  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour. Serve chilled, garnishing with additional feta cheese and chopped fresh parsley if desired.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving to redistribute the dressing.
