Ingredients
  

Pizza Dough

  • 2 1/4 cups all-purpose flour
  • 1 packet 2 1/4 tsp active dry yeast
  • 1 tsp sugar
  • 1 cup warm water about 110°F
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/3 to 1/2 cup pizza sauce before toppings

Toppings

  • 1 cup fresh corn kernels
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves torn

Preparation

  • In a large mixing bowl, dissolve the yeast and sugar in warm water and let it sit until frothy, about 5 minutes. Stir in the oil and salt. Gradually add the flour, mixing until a dough forms. Knead the dough on a floured surface until smooth and elastic, about 5-7 minutes. Place it in a greased bowl, cover, and let rise until doubled, about 1 hour.
  • Preheat your oven to 475°F. If using a pizza stone, place it in the oven to heat up as well.
  • Punch down the risen dough and transfer to a floured surface. Roll it out to your desired thickness, ensuring it's even all around. Transfer to a pizza stone or baking sheet.
  • Spread the corn evenly over the dough. Sprinkle mozzarella and Parmesan cheese over the corn. Tear the basil leaves and distribute them evenly over the top.
  • Place the assembled pizza in the preheated oven. Bake for 12-15 minutes or until the crust is golden brown and the cheese is bubbly and slightly browned.
  • Remove the pizza from the oven and allow it to cool for a few minutes to set the toppings. Slice into 8 pieces and serve warm.

Serving

  • Pair with a simple green salad or enjoy on its own. It also pairs well with a crisp white wine or light beer.
