Ingredients
  

Pesto Sauce

  • 2 cups fresh basil leaves
  • 1/2 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup grated Parmesan cheese

Pasta

  • 12 oz spaghetti or linguine
  • Salt to taste
  • Pepper to taste

Instructions
 

Preparation

  • In a food processor, combine basil leaves, pine nuts, and garlic. Pulse until finely chopped. Gradually add olive oil while the processor is running until a smooth paste forms. Stir in Parmesan cheese and season with salt and pepper to taste.
  • Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  • In a large mixing bowl, combine the hot pasta with the prepared pesto sauce. Add reserved pasta water a little at a time to reach the desired consistency. Toss until the pasta is evenly coated.

Serving

  • Divide the pasta among serving plates. Garnish with additional Parmesan cheese and fresh basil leaves, if desired. Serve immediately.

Storage

  • Store any leftover pasta in an airtight container in the refrigerator for up to 3 days. Drizzle a little olive oil over the top before sealing to keep the pesto fresh.
  • To reheat, gently warm on the stovetop over low heat. Add a splash of water or olive oil to help loosen the sauce. Avoid microwaving as it may alter the texture.
