  • 1 teaspoon baking powder

Wet Ingredients

  • 1 piece egg
  • 1/2 cup milk (or non-dairy alternative)
  • 1 tablespoon maple syrup (or sweetener of choice)
  • 1/2 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine oat flour, protein powder, and baking powder.
  • In another bowl, whisk together the egg, milk, maple syrup, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Pour the batter into a greased single-serving baking dish or bowl.

Baking

  • Bake in the preheated oven for 12-15 minutes or until the pancake is fluffy and cooked through.
  • Allow to cool slightly before serving.

Notes

You can substitute whole wheat flour for oat flour and adjust sweetness to taste. Customize toppings with berries, nuts, or yogurt. For a chocolate version, try adding cocoa powder.
