Ingredients
  

Fried Rice

  • 3 cups cooked rice cold and preferably day old
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 5 cloves garlic finely minced
  • 2 large eggs lightly beaten
  • 2 tbsp soy sauce
  • salt to taste
  • black pepper to taste

For Finishing

  • 2 green onions thinly sliced

Instructions
 

  • Heat a large skillet over medium heat. Add the butter and olive oil and let them melt together.
  • Add the minced garlic and cook briefly, stirring constantly, until fragrant but not browned.
  • Push the garlic aside and pour in the beaten eggs. Scramble gently until just set.
  • Add the cold rice and break up any clumps. Stir to combine with the eggs and garlic.
  • Drizzle in the soy sauce, season with salt and black pepper, and stir well.
  • Cook for 5 to 7 minutes, stirring occasionally, until heated through and lightly golden.
  • Remove from heat, finish with green onions, and serve warm.

Notes

This recipe is easy to adjust for family preferences. Reduce garlic for milder flavor or add vegetables for variety.
