  • 1 package store-bought ravioli Cheese or mushroom ravioli works best.
  • 2 cups fresh spinach, chopped You may use frozen spinach if needed.
  • 1 cup mushrooms, sliced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 2 tbsp olive oil
  • to taste Salt and pepper
  • to taste Grated Parmesan cheese for garnish

Cooking

  • Cook the ravioli according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  • Add mushrooms and sun-dried tomatoes to the skillet. Cook until mushrooms are golden brown.
  • Stir in spinach and vegetable broth. Cook until the spinach is wilted and the mixture is heated through.

Notes

Swap in your favorite vegetables like bell peppers or zucchini for extra flavor. For an extra kick, sprinkle in some red pepper flakes while sautéing. This dish pairs perfectly with a simple green salad and a glass of your favorite white wine.
