Zucchini Pasta

  • 4 medium zucchinis
  • 2 tablespoons olive oil
  • 2 cloves garlic minced

  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Preparation

  • Wash the zucchinis thoroughly. Using a spiralizer, create noodle-like strands. If a spiralizer is unavailable, use a vegetable peeler to make thin strips resembling pasta.
  • Place the spiralized zucchini on a paper towel to absorb excess moisture and prevent sogginess during cooking.

Cooking

  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add the zucchini noodles to the skillet. Toss gently using tongs to coat with oil and garlic. Cook for 3-5 minutes, stirring occasionally, until just tender.

Serving

  • Transfer zucchini pasta to a serving dish. Season with salt and pepper, and sprinkle with Parmesan cheese. Garnish with fresh basil and serve immediately.

Storage

  • Place any leftovers in an airtight container. Store in the refrigerator for up to 2 days. Reheat gently in a skillet over low heat to retain texture.
