Instructions
Preheat oven to 350 degrees Fahrenheit and line a cake pan with parchment paper.
Whisk eggs and sugar until pale and slightly thickened.
Add oil, milk, vanilla, and zest and whisk until combined.
Mix flour, baking powder, and salt in a separate bowl.
Gently fold dry ingredients into wet mixture.
Pour batter into prepared pan and smooth the top.
Bake for 35 to 40 minutes until set and lightly golden.
Cool briefly, then transfer to rack to cool completely.
Notes
This cake is intentionally lightly sweet. Adjust citrus zest to taste.
