Ingredients
  

Fried Rice

  • 3 cups cooked rice preferably day old
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 5 cloves garlic finely minced
  • 2 large eggs lightly beaten
  • 2 tbsp soy sauce
  • salt to taste
  • black pepper to taste

For Finishing

  • 2 green onions thinly sliced

Instructions
 

  • Heat a large skillet over medium heat. Add the butter and olive oil and let them melt together.
  • Add the minced garlic and cook briefly, stirring constantly, until fragrant but not browned.
  • Push the garlic to one side of the pan. Pour in the beaten eggs and scramble until just cooked.
  • Add the rice and break up any clumps. Stir until the rice is coated with the garlic and egg.
  • Drizzle in the soy sauce and stir well so each grain is evenly seasoned.
  • Season with salt and black pepper to taste. Cook 5 to 7 minutes, stirring occasionally, until hot and lightly golden.
  • Remove from heat and finish with sliced green onions. Serve warm.

Notes

Day old rice gives the best texture. If using fresh rice, spread it out to cool before frying. Add peas, carrots, or leftover chicken if you want a heartier meal.
