  • 1 pound chicken tenderloins
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (Panko recommended) For extra crispiness
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray or olive oil for baking

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  • In a bowl, combine flour, garlic powder, paprika, salt, and pepper.
  • In another bowl, whisk eggs until the yolks and whites are fully combined.
  • In a third bowl, place the breadcrumbs.
  • Dip each chicken tender into the flour mixture, coating it well, then into the eggs, and finally roll it in the breadcrumbs until fully covered.
  • Place the breaded tenders on the baking sheet. Lightly spray or drizzle with olive oil.
  • Bake for 15-20 minutes or until golden brown and cooked through. Use a meat thermometer to ensure they reach 165°F (74°C).
  • Remove from the oven and let them rest for a few minutes before serving.

Notes

If you prefer a gluten-free version, substitute all-purpose flour with almond flour or a gluten-free flour blend. For added flavor, mix grated Parmesan cheese into the breadcrumbs, and adjust seasonings based on your taste. Double-coat for extra crunch or experiment with different dipping sauces.
