Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 Mixing Bowl large
  • 1 Rolling Pin

Ingredients

Dough

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 packet 0.25 oz active dry yeast
  • 3/4 cup warm water
  • 2 tbsp olive oil

Toppings

  • 1 medium zucchini thinly sliced
  • 1 cup mozzarella cheese shredded
  • 1/4 cup fresh basil leaves chopped

Instructions

Preparation

  • In a large mixing bowl, combine flour, salt, and sugar. Dissolve yeast in warm water and let sit for 5 minutes. Add yeast mixture and olive oil to dry ingredients and mix until a dough forms. Knead the dough on a floured surface for 5 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 45 minutes.
  • Preheat your oven to 425°F while the dough is rising.
  • Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness. Transfer the rolled dough onto a baking sheet lined with parchment paper.

Topping and Baking

  • Arrange the zucchini slices evenly over the dough. Sprinkle mozzarella cheese on top and scatter chopped basil leaves. Add any optional toppings you prefer.
  • Place the flatbread in the preheated oven and bake for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Remove from the oven and let cool slightly before slicing.

Serving

  • Slice the flatbread into pieces and serve warm as an appetizer or main dish. Pair with a salad or enjoy on its own.

Storage

  • Wrap any leftover flatbread in aluminum foil or place in an airtight container and refrigerate for up to 3 days. Reheat in the oven for a few minutes before serving.
