Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 Rolling Pin
  • 1 Mixing Bowl large

Ingredients

Flatbread Base

  • 2 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 tsp sugar
  • 1/2 tsp salt
  • 3/4 cup warm water
  • 1 tbsp olive oil

Toppings

  • 1/2 cup basil pesto
  • 1 cup cooked chicken breast sliced
  • 1 cup fresh mozzarella sliced
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes optional

Instructions

Preparation

  • In a large mixing bowl, combine the flour, yeast, sugar, and salt. Add warm water and olive oil, mixing until a dough forms. Knead on a floured surface for about 5 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover, and let it rise in a warm place for about 30 minutes, or until doubled in size.
  • Preheat your oven to 425°F.
  • After the dough has risen, roll it out into a thin, round shape to fit your baking tray.
  • Spread an even layer of basil pesto over the dough. Top with chicken slices and mozzarella. Sprinkle with Parmesan and red pepper flakes.

Serving

  • Bake the flatbread in the preheated oven for 15-20 minutes, until the crust is golden brown and the cheese is bubbly.
  • Remove from the oven and let it cool for a few minutes. Slice into pieces and serve warm.

Storage

  • Wrap any leftover flatbread in foil or place in an airtight container. Store in the refrigerator for up to 3 days.
  • To reheat, place slices on a baking sheet and warm in a 350°F oven until heated through.

Notes

Pro Tips: Ensure the water is warm, not hot, for activating the yeast. Pre-bake the flatbread for a crispier crust. Experiment with different types of pesto. Use a pizza stone for a better crust.
Ingredient Substitutions: Use whole wheat flour for a healthier option. Substitute rotisserie chicken for cooked chicken breast if preferred.
How to Serve: Serve with a fresh salad or soup. Pair with white wine or lemonade.
Storage & Freshness: Store in the refrigerator for up to 3 days. Reheat in a 350°F oven.
Make-Ahead Tips: Prepare the dough in advance and store it in the refrigerator for up to 24 hours before baking.
