Ingredients
  

For the salmon bites

  • 1 lb salmon fillets
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • Vegetable oil for frying

For the sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon garlic powder

Preparation

  • Preheat the oven to 400°F (200°C). Cut the salmon into bite-sized pieces.
  • Set up a breading station: Place flour in one bowl, beaten eggs in a second bowl, and panko breadcrumbs in a third bowl.
  • Season the salmon pieces with salt and pepper.
  • Dredge each piece of salmon in flour, dip into the egg, and then coat with panko breadcrumbs.

Cooking

  • In a large skillet, heat vegetable oil over medium-high heat. Fry the salmon bites until golden and crispy, about 3-4 minutes per side.

Sauce Preparation

  • In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and garlic powder.

Serving

  • Serve the crispy salmon bites with the spicy-sweet sauce.

Notes

For variations, try adding grated parmesan to the panko breadcrumbs or swap salmon for cod or haddock. Use a splatter guard when frying to minimize mess.
