Preparation

  • Wash and grate the zucchinis. Pat dry with a paper towel to remove excess moisture.
  • Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add orzo to the skillet and cook for 2 minutes, stirring frequently, until slightly toasted.
  • Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes or until the orzo is al dente.
  • Stir in grated zucchini, Parmesan cheese, and heavy cream. Mix until the cheese melts and the mixture becomes creamy.
  • Season with salt and pepper to taste. Fold in fresh basil and parsley. Let it simmer for an additional 2 minutes.

Serving

  • Transfer the creamy orzo to serving plates. Garnish with extra herbs if desired.
