  • 4 pieces boneless, skinless chicken breasts Can substitute with chicken thighs for juiciness.
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 4 cups fresh spinach Can substitute with kale or other leafy greens.
  • 1 cup heavy cream Can be replaced with half-and-half for a lighter version.
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving Adds salty flavor to the dish.

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken breasts with salt and pepper, then add to the skillet, cooking until golden brown, about 5-7 minutes per side. Remove and set aside.
  • In the same skillet, add mushrooms and garlic, sautéing until tender and fragrant, about 3-4 minutes.
  • Stir in the heavy cream, chicken broth, and Italian seasoning.
  • Return the chicken to the skillet and let simmer for 8-10 minutes until cooked through.
  • Add fresh spinach to the skillet, cooking until wilted.
  • Serve hot, topped with grated Parmesan cheese.

Notes

For added heat, a pinch of red pepper flakes works beautifully. Leftover grilled chicken can also be used for a quick dinner.
