  • 1 cup heavy cream
  • 1 cup grated parmesan cheese

Preparation

  • In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add diced tomatoes and simmer until slightly thickened.
  • Stir in the heavy cream and grated parmesan cheese, and cook until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.
  • In a large pot of boiling salted water, cook pasta until al dente according to package instructions. Drain, reserving 1 cup of pasta water.
  • Add the pasta to the sauce, tossing to combine. Use reserved pasta water to adjust the sauce consistency if needed.
  • Stir in red pepper flakes and fresh basil, if using. Serve immediately with additional parmesan cheese.

Serving

  • Garnish the pasta with fresh basil and extra parmesan. Serve hot with a side salad or garlic bread.
