  • 12 ounces pasta of your choice such as penne or fettuccine
  • 1 cup sun-dried tomatoes in oil drained and chopped
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil chopped
  • Salt and pepper to taste

Preparation

  • Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve a cup of pasta water, then drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Stir in the chopped sun-dried tomatoes and cook for 2-3 minutes to release their flavors.
  • Pour in the heavy cream and bring to a simmer. Cook until the cream thickens slightly, about 5 minutes.
  • Add the grated Parmesan cheese and fresh basil to the sauce. Stir until the cheese is melted and the sauce is smooth.
  • Add the cooked pasta to the skillet and toss to coat evenly with the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  • Season with salt and pepper to taste. Serve immediately, garnished with extra Parmesan and basil if desired.
