Equipment

  • 1 Large pot for boiling pasta
  • 1 Large skillet
  • 1 Colander
  • 1 Wooden spoon

Ingredients

Main Ingredients

  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 2 cups fresh spinach
  • 1 1/2 cups cherry tomatoes halved

Sauce Ingredients

  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

Preparation

  • Wash and dry the spinach. Halve the cherry tomatoes and mince the garlic. Grate the parmesan cheese and set it aside.
  • Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and reserve 1 cup of the pasta water.
  • In a large skillet over medium heat, warm the olive oil. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Add the halved cherry tomatoes to the skillet and cook until they begin to soften and release their juices, about 3-4 minutes.
  • Stir in the fresh spinach and cook until wilted, approximately 2 minutes.
  • Pour in the heavy cream and stir. Add grated parmesan cheese, basil, oregano, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
  • Add the cooked spaghetti to the skillet. Toss everything together to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serving

  • Transfer the creamy spinach tomato spaghetti to plates. Garnish with additional parmesan cheese and fresh basil if desired.

Storage

  • Place any leftovers in an airtight container and refrigerate for up to 3 days. Reheat gently on the stovetop or in the microwave with a splash of water to loosen the sauce.
