Preparation

  • Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the top, about 3 minutes. Drain and set aside, reserving 1 cup of the pasta water.
  • In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute. Add spinach and cook until wilted.
  • Pour heavy cream into the skillet and bring to a simmer. Stir in Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.
  • Add the cooked gnocchi to the skillet, gently tossing to coat with the sauce. If the sauce is too thick, gradually add reserved pasta water to reach desired consistency.

Serving

  • Serve the creamy spinach gnocchi immediately, garnished with extra Parmesan cheese and a sprinkle of red pepper flakes if desired.
