Ingredients
  

For the Skillet

  • 16 oz potato gnocchi
  • 1 tbsp olive oil
  • 2 garlic cloves minced
  • 1 cup heavy cream or half and half
  • 4 cups fresh spinach
  • 1/2 cup feta cheese crumbled
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Sauté gnocchi in olive oil until lightly golden.
  • Add garlic and cook until fragrant.
  • Stir in cream and simmer gently.
  • Add spinach and feta and cook until wilted and creamy.

Notes

Add a splash of cream when reheating to maintain a smooth sauce. Best enjoyed within 2 to 3 days.
