  • Preheat oven to 400°F. Cut the tops off the garlic heads to expose cloves, drizzle with olive oil, and wrap in foil. Roast for 30-35 minutes until soft and golden.
  • In a large pot, boil water and cook spaghetti according to package instructions. Reserve 1 cup of pasta water before draining.
  • Squeeze roasted garlic out of skins into a saucepan. Add heavy cream and simmer over medium heat. Stir in Parmesan until melted and thickened. Season with salt and pepper.
  • Toss spaghetti with garlic sauce, adding reserved pasta water as needed. Stir to coat evenly.
