Equipment

  • 1 Large pot for boiling tortellini
  • 1 Colander for draining pasta
  • 1 Large mixing bowl

Ingredients

Main Ingredients

  • 1 pound cheese tortellini
  • 1 cup fresh basil pesto
  • 1 cup cherry tomatoes halved
  • 1 cup mozzarella balls drained

Optional Add-ins

  • 1/2 cup grilled chicken sliced
  • 1/4 cup black olives sliced

Instructions

Preparation

  • Bring a large pot of water to a boil. Add tortellini and cook according to package instructions, about 7-9 minutes. Drain and rinse with cold water to cool.
  • If making homemade pesto, blend fresh basil leaves, Parmesan cheese, pine nuts, garlic, and olive oil in a food processor until smooth. Season to taste with salt and pepper.
  • In a large mixing bowl, combine the cooked tortellini, pesto, cherry tomatoes, and mozzarella balls. Toss gently until well coated.
  • If using, add grilled chicken and black olives to the salad. Toss again to distribute evenly.
  • Cover the salad and refrigerate for at least 1 hour to allow flavors to meld together.
  • Garnish the salad with fresh basil leaves and a sprinkle of Parmesan cheese before serving.
  • Store any leftover salad in an airtight container in the refrigerator for up to 3 days.
  • This salad can be made a day in advance. Prepare all ingredients and combine just before serving to maintain freshness.
  • Serve the salad cold or at room temperature as a side dish or main course.
