  • 1 1/2 cups orzo pasta
  • 2 tbsp olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 cups fresh spinach roughly chopped
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Preparation

  • Gather all ingredients. Chop the onion and mince the garlic. Grate the Parmesan cheese.
  • Bring a large pot of salted water to a boil. Add the orzo and cook until al dente, about 8-10 minutes. Drain and set aside.

Serving

  • In the same pot, heat olive oil over medium heat. Sauté onion and garlic until fragrant, about 3 minutes. Add chicken broth and cream, stirring to combine.
  • Return the orzo to the pot. Add spinach and Parmesan cheese, stirring until the spinach wilts and the cheese is melted. Season with salt and pepper to taste.

Storage

  • Transfer any leftovers to an airtight container. Refrigerate for up to 3 days. Reheat gently, adding a splash of broth if needed.
