  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup grated parmesan cheese
  • 8 oz pasta penne or rigatoni

Preparation

  • Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook the chicken until golden brown on both sides and no longer pink in the center. Remove from the skillet and set aside.
  • While the chicken is cooking, bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In the same skillet used for the chicken, add garlic and sun-dried tomatoes. Sauté for about 2 minutes until fragrant. Add chicken broth and bring to a simmer.
  • Lower the heat and stir in the heavy cream and parmesan cheese. Continue to stir until the cheese has melted and the sauce is smooth. Let it simmer gently to thicken slightly.
  • While the sauce is simmering, slice the cooked chicken into thin strips. Add the chicken back into the skillet, stirring to combine with the sauce.
  • Add the cooked pasta to the skillet, gently tossing everything together until the pasta is well-coated with the sauce and chicken pieces.
  • Sprinkle red pepper flakes and fresh basil over the pasta before serving. Adjust seasoning with salt and pepper if needed.

Serving
